Beef Chipotle Chili

Flour, 1/4 cup
Salt and Pepper
Boneless Beef Chuck, 3lbs
Olive Oil, 4-6 Tbsp
Dried oregano, 1 1/2 tsp
Garlic, 4 cloves
Red Onions, 2 finely chopped
Beef Broth, 2 cups
Chipotle chiles in adobo sauce, 1 7 oz. can
White Cannellini beans, two cans

Combine the flour, 1 tsp of salt and 1/2 tsp of pepper in a resealable bag. Add the cubed beef and shake. Save the flour. Heat 4 Tbsp, cook all the beef until browned. Transfer to slow cooker. Sprinkle the oregano over the meat.

Return the pan to medium high heat. Add the garlic and all but 1/4 cup of the onions and saute until fragrant, about a minute. Sprinkle with the reserved flour and saute for another minute. Pour in the broth and add the chipotle chiles with their sauce, breaking up the chiles coarsely with your fingers. Raise the heat until boil, deglazing the pan, stirring to scrape up the browned bits in the pan. Pour over the beef.

Cover and cook for 3-4 hours on high or 6-8 hours on low. Drain the beans and add them an hour before the end. The beef should be very tender. Garnish with the remaining 1/4 cup of chopped onion.

Recipe is equally delicious with ground turkey. Substitute a dark mexican beer for some or all of the beef broth for a rich earthly flavor.

Chicken and Sausage Cassoulet
(for a 4-quart slow-cooker)

Ingredients
1 15-oz. can navy beans, or small white beans, undrained [1]
1 6-oz. can tomato paste
1 cup chicken stock.
2 medium carrots, cut into ?-inch pieces (1 cup)
1 stalk celery, cut into ?-inchpieces (1/2 cup) [2]
? cup chopped onion (medium cubes)
1 clove garlic, minced
1 bay leaf
? teaspoon dried basil, crushed
? teaspoon dried oregano
4 chicken drumsticks, skinned and frozen
4 oz. smoked turkey sausage link

Procedure
1. In a crock cooker combine beans, tomato juice, carrots, celery, onion, garlic, bay leaf, basil, oregano. [3]
2. Place frozen chicken atop bean mixture. Cut sausage in half lengthwise and slice; place atop chicken.
3. Cover; cook on low heat setting for 10 to 12 hours or high setting for 5 to 6 hours. Remove bay leaf. Makes about 8 servings.

[1] I drained mine, and I didn't even realize I wasn't supposed to until writing this up just now. How about that?
[2] I never use celery because the enormous packages of it go bad before we ever use it. Also, I sliced up baby carrots.
[3] I tossed in some cumin because our sausage wasn't smoked.
